The classic Pisco Sour
3 parts Pisco
1 part granulated sugar
1 part lime juice
1 part egg white
Shake vigorously with ice until frothy and strain into a small wine glass
Garnish with ground cinnamon.

25 mls Pisco
25 mls St Germain Liqueur
10 mls lemon juice (fresh squeezed)
10 mls lime juice (fresh squeezed)
5 mls sugar syrup (equal parts sugar and water, heated to melt the sugar and then cooled)
3 dashes of Absinthe
1 egg white
Shake vigorously with ice until frothy and strain into a coupe glass
